Description

This elegant Cava is made from separately vinified grapes, with refrigerated pressing to preserve aromas and a low-yield juice extraction (50%). After cool fermentation, the base wines—high in acidity and low in pH—undergo a second fermentation and age over three years on lees in underground cellars kept at a steady 14ºC.

Pale yellow and bright, it releases fine, persistent bubbles and forms a delicate crown. The nose is fresh and fruity, with exotic notes layered over toasty, creamy aromas of pastry, dried flowers, and yeast. On the palate, it’s vibrant and voluminous, with refined bubbles, balanced acidity, and a hint of sweetness from extended aging.

Pair with oysters, creamy risotto, or smoked salmon blinis.
