Description
This elegant organic cava is made from grapes vinified separately, with low-temperature maceration and a press yield of 50%. Fermentation occurs at 16–18ºC using selected yeasts. Base wines with high acidity and low pH are aged in underground cellars 30 meters deep at a constant 14ºC, ensuring optimal second fermentation and aging conditions.
Tasting Notes
Delicate pink color with pale salmon tones. Bright and lively, with a fine, persistent mousse and elegant crown formation. On the nose, it offers fresh, intense aromas of red fruits layered over a creamy, delicate background. The palate is fresh and refined, with silky texture, vibrant acidity balanced by subtle sweetness, and a graceful, fruity finish.
Serving Temp: 6–8ºC
Pair with: sushi, goat cheese salad, poached salmon, or raspberry tart.
