One of the best-known and most prestigious wineries in Ribera del Duero, Pago de Carraovejas is the dream of restaurateur José María Ruiz , who after opening the famous restaurant that bears his name in Segovia, bought his first nine hectares of vineyard in the municipality of Peñafiel (Valladolid) at the end of the 80s.

Three of the concepts that shape the making El Anejón process are the exhaustive selection of the bunches, the gravity flow, and the aging geared towards enhancing its origin and genuine character. After manual harvesting in small crates, the bunches go through a cold room and selection table where each grape is carefully selected. Fermentation takes place in French oak vats with different formats to enhance the characteristics of this plot. Aging was carried out for 12 months in new barrels, also made of French oak, with extra fine grain

Tasting Notes

Aromas of blackberry, chocolate-covered espresso bean and lavender set the stage for flavors of cassis, black plum, rose petal, cocoa and licorice. Polished tannins and fine-tuned acidity wend their way to an orange-zest finish.

Food Pairings

Ideal with long braised red meat or game.
