Description
Winter is not often imagined as the season when flowers bloom. A cold camellia that blooms in such a winter. “Born Kantsubaki” is also a Junmai Daiginjo sake that conveys the strength and nobility of the core in the fragility, like the Kantsubaki that blooms dignifiedly in the snowy Echizen garden.
The sake rice used is Yamada Nishiki from Hyogo’s special A district. The sake brewed as Junmai Daiginjo was aged for two years in an ice temperature room kept at 0 degrees after bottling.
TASTING NOTES
Nose : Fine, rich. Fluffy, its fruitiness caresses the taste buds. Roundness and exoticism are essential. The second nose clarifies things, pear, rice, mushrooms (white truffle), flowers (lilac) nuance a beautiful herbaceous substance with character.
Overall : Long, it loses nothing in intensity. The yeasts set the tone, it will be fruity, melon, fig. Evokes an “okashi”, a traditional Japanese cake. Dried fruits (fig, date) prove him right. Its tannins shrink the palate and the empty glass is crystalline.
