Sancerre Blanc Le Paradis La Villaudiere 2021

 Our plot " Le Paradis " is about sixty years old. It is located in Sancerre, on a hillside, on a terroir of Caillottes and benefits from a south-eastern exposure.

 Its healthy and fragrant Sauvignon Blanc grapes are harvested at optimum maturity. This very high-quality harvest is transported to the press by vibration and the juices flow by gravity. 

Alcoholic fermentation takes place in barrels and there is no malolactic fermentation in order to preserve acidity and freshness.

The 12-month aging on fine lees is carried out in barrels containing several wines. The aim of this aging in barrels is to allow the exchange with the outside but above all the expression of the terroir and the singularity of this plot by giving it texture and finesse .

The nose offers notes of grapefruit , hawthorn, fresh herbs and white pepper. The palate is silky and airy , with aromas of acacia flowers , honey and citrus fruits. Minerality, finesse and density are the key words of this Sancerre.
